My squad isn't playing in the SB nor do I care for the NFL, but Superbowl Sunday has always been a holiday. It's more about friends and family. With that being said what's on your tailgate menu? Everyone is doing wings, poppers, Texas Twinkies, or armadillo eggs. What else do you guys plan on putting on the grill or on the stove?

Not looking to buy food. I was looking to add or replace items from my menu. I'm cooking for about 15-20 people and if it were up to me it would be heavily cajun flavored. But... I'm here in Austin and I want to challenge my friends taste buds.

I have some left over beef ribs that I plan on using to make sliders, tacos, and my armadillo eggs with. Kind of makes me miss home because I'd much rather links, boudain, and crawfish. But when in Rome... Are you making a full slab or party ribs? 

some brats with onions and peppers plus jalapeño sausage never fails if peoole are hungry, and pigs in a blanket for a counter snack works for our crowd. Plus queso as said above.

I don't know if it's challenging taste buds, but maybe a spicy alternative would be chicken or steak skewers with a Thai chili sauce. Got me thinking nie!

😂 When you see the crowd I'm cooking for the spiciest thing in the cupboard is Dijon mustard. It is most definitely a challenge. 

Im doing some carne asada tacos, spicy chicken fajitas and some pigs in a blanket with jalapeño sausage

my gf also makes some really good strawberry lemonade 

I like to do mixed fajitas.   I usually make beef, chicken, shrimp, sausage, and steak (sliced for fajitas).  Then everything else ties in, home made refried beans, home made pico de gallo, your cheese dip, fresh guacamole, sour cream, etc.

 

 

One of my favorite restaurants is Ribs of Vienna in Austria. I am not suggesting a DoorDash, rather they do ribs but with rubs/flavorings like you would cook wings. They marinate for three days prior to cooking. Makes for some different takes on ribs. 

Bacon Explosion is always a SB hit over here. Fun, yet easy to make! My wife likes to make wonton tacos, and jalapeno wonton wrappers. You mentioned you wanted something with a Cajun flair, instead of doing a traditional buffalo chicken dip, do a Cajun style chicken dip or Cajun biscuit bombs

I'm a big fan of how lambchops taste coming off the pit. I've recently smoked and braised some oxtails on the pit till they were tender. 🤘🏿

 

edit: I also like to smoke salmon on the pit.

I always like to do a general theme for the teams in the Super Bowl. Either mascot or colors. E.g., if the rams would put some goat meat on the smoker with a honey blueberry glaze and if the broncos obviously some chili with cowboy coffee rubbed brisket and a habanero blue cheese sour cream. 

I do a big cook-up over here in Australia every year for the SB.  The fan favorite over the years has been my homemade chili.  I also have an Aussie verison of queso which everyone seems to enjoy.  Beyond that, I've done all the standards, but also some pulled pork sliders, pork ribs, cajun corn ribs, etc.

We usually do 1-3 different jalapeño popper recipes along with homemade dips, queso’s and chips. depending on the size of the group we do a “grazing table” charcuterie board on steroids is what I call it.

Lord willing, I’ll be at worship and won’t be doing Super Bowl Sunday, but I’ll share some things you might consider:

- Bacon wrapped jalapeño but put a half (lengthways) piece of shrimp on top of cream cheese and under bacon 

- Hawaiian rolls sliders with ham/turkey/cheese

- Mexican street corn on the cob 

- Crock pot chicken dip (cream cheese, green chilis, canned chicken) 

- Sausage balls 

- Loaded potato deviled eggs (bacon, chive, whipped potato mixed with yolks, top with sour cream, jalapeño slice, etc).
